Throwing a New Year’s Eve soirée this year? No celebration is complete without a signature cocktail recipe so why not give this tipple from The Rum Runner a try. Guaranteed to get your guests in the party mood, it’s time to get merry!
BEYOND THE STARS
- 75ml Fino Sherry
- 10ml Lemon Juice
- 15ml Star Anise Syrup
- 1/4 Clementine
- 8 Redcurrants
To make the star anise syrup…
Bash up 6 star anise with a muddler and gently toast in a frying pan . Mix this with equal parts sugar and water and gently warm in a pan over a low heat until the sugar has dissolved. Do not boil. Let it cool and strain through a fine sieve or some muslin. You can infuse it overnight for a stronger flavour.
To make the cocktail…
Add all ingredients to a cocktail shaker and muddle fresh fruit. Fill shaker with ice and shake. Double strain over crushed ice and garnish.
